## Why these answers are right

**1. potatoes.** Paragraph A says people in the Andes two thousand years ago had a unique way of conserving potatoes: freezing them overnight, squeezing out moisture and drying them in the sun. That process kept their nutritional value, so potatoes fills the gap.

**2. butter.** Paragraph B reports that from 1851 railroads put ice blocks into insulated rail cars to send butter from Ogdensburg to Boston. Specially adapted trains paraphrase insulated rail cars, so the food kept cool was butter.

**3. meat.** Paragraph D says Australian cattlemen saw they could export meat, and in 1880 a shipment of beef and mutton was sent frozen to England. Beef and mutton are the two kinds, and the one word covering both is meat.
